      This is a simple terayaki sauce of sugar-soy sauce-mirin slightly thickened with cornstarch with lemon peel as a garnish. I prefer terayaki sauce that includes saki and uses honey rather than sugar. Not a bad recipe, but I won't repeat.

      I love this dish - burdock and carrots with a bit of heat with slightly sweetened soy sauce and sesame seeds. This recipe is a standard although it does depend on a bit of a drive for the burdock.

All of these recipes are characterised by being easy to create, and by their use of ingredients that are readily obtainable across Europe. The dishes are clearly described, and accompanied by the superb colour photographs of specialist Akira Saito.
