      We currently only have a gas Weber and used applewood chips in a small smoker box which doesn't add a lot of smoky flavor in all honesty, but despite that this recipe was still terrific. Cooked 10mins each side direct 400F heat then turned the front burner off (leaving the back two on to maintain the 400F heat, but moving the loin so it was as far away as possible from the middle burner) and cooked on indirect heat for 70mins basting with the sauce at 60mins.

      Nice flavor. A little dry. Would dry brine or inject next time. Like the rum on the bird rather than the skin.

      Very sweet and a bit pedestrian for our taste but very simple and works with fatty brisket.

      Came out okay. Like my ribs a little sweeter. Would add a touch more salt. Don’t be tempted to wrap. I wrapped 1/2 at around 2:45 and those ribs fell off the bone. The unwrapped rack had the right pull. The sauce with this is fantastic.
