      I like this as written with blueberries and apple, I have also used fresh cranberries in place of the blueberries and lastly I have used a can of whole berry cranberry sauce. With a cranberries I often add crystallized ginger.

      The frosting on this cake is too sweet. The cake was interesting - whip cream as fat instead of butter but that didn't produce the lighter cake that I thought it would. The cake was more pound cake than not with good but not exceptional flavor.

      Cake has a similar taste to gingerbread, even though it is a reworking of the original recipes without ginger! The fudgy icing is delicious, would use on other cakes as well.
