      I made this to the T, but I wasn't a huge fan. It came out a little soggy, even though I used less milk and I dried the spinach really well. But it was better when it cooled. Maybe using a metal pan would yield better result, I used a ceramic pie plate.

      I return to this recipe every year. Very easy to make and full of flavor with a nice balance of spicy and sweet. Delicious as written, served on ciabatta rolls, but just as tasty as a stand-alone entree with jalapeno cranberry sauce. Only 3lb boneless turkey breasts are available in my area. These take considerably longer to roast- up to 1.5 hours.
