Ritzy Ramen Salad, page 108. Gosh, I've shared this recipe with many people over the last 25+ years and this salad is copied in different forms on different online sites. But, I believe this is the original and the best. Inexpensive and you can adjust the amount to fit many occasions. Lasts really well like 5-7 days and few of us actually like this after sitting in the refrigerator few days to mingle the taste and cabbage to become somewhat similar to Korean and Japanese style overnight cabbage pickles. I used to send my husband with this salad to his work parties of mostly men whenever they needed a salad that keeps well, can be tossed quickly and ok with the rough handling of inexperienced cooks. Also, this is very similar to some of the retro Chinese chicken salads we found in many places with the difference of lettuce instead of cabbage. I still make this salad few times a year and look forward to the leftovers. Always used leftover rotisserie chicken for this too.
