      I used maple roasted pecans instead of the plain pecans, and omitted the raisins. I also halved the amount of apple. I would stick to those mods next time too. So far all the salads we have tried from this book have been keepers.This one was no exception. I served it with roasted chicken. Use an excellent quality blue cheese because there’s a lot of it - a mild one is best, so as not to overwhelm the other fresh flavors with too much earthiness

      Another really great one I added ton more kale otherwise it would’ve been way too potato heavy. I usually double the dressings from this book so I can add the perfect amount. Then if there is a bit of leftover dressing, that’s not a bad thing either. IMO it’s a sad situation when a great salad is reduced to being just a good salad because it doesn’t have enough dressing
