      So I made this a couple different ways. One- as the recipe indicates coated and fried in (safflower) oil. Then without the flour/spice coating and just pan sauteing (to save time) with less quantity of avocado oil. The latter was really good, but the former was amazing. We served it on top of mixed lettuce, a generous portion of spicy pico de gallo and topped it with ranch dressing, and a drizzle of really good balsamic. Really addictive.
