      If you want to cook Scandinavian food, there is no such thing as too many herring recipes. This recipe basically combines a simple root vegetable salad with herring. For both the pickled beets and pickled cucumber try to use pickles with a Scandinavian pickle spice mix. Ignore the "low-fat" adjective in front of sour cream. Everyone I know would make their own sour cream from full-fat cream, the % fat determined by the cow. This is a great recipe.
