      This was a big hit and a great way to feed a crowd. It is just a tiny bit spicy but very full-flavored. Each of the steps is very simple but there is enough chopping (especially if you are doubling the recipe, as I did) to suggest using a food processor instead of practicing knife skills. I substituted diced tomatoes, which worked very well. Also I used sliced blanched almonds instead of peanuts in the garnish, as that is what I had on hand and other Country Captain recipes in my collection call for almonds.

      Wish I had read PinchOfSalt's comment before I cooked this last night. It certainly was a lot of chopping, a food processor would definitely have helped. Taste-wise, it was not much better than the much simpler Better Homes and Gardens version that I normally used, but the sauce did a lot more body because of all the vegetables. I did not cook it as long because we were hungry. Also, I agree that almonds as called for in my normal recipe are better than peanuts.
