  • Broccoli & Stilton soup

      Nice soup, easy to prep. Made due to having some Christmas Stilton leftovers. Added 90g (not 200!) of the cheese to the soup which seemed ample. We don’t often have Stilton in, but would make this again if needed to use some up.

      This is just fine for a cold weather weeknight meal. I would be tempted to fold in some grated cheese to the white sauce if I made this again. I also browned some onions and added it to the recipe. The bread crumbs add a nice crunch to offset the creaminess of the dish.

      So I repeated this recipe to help use up a spiral ham from Christmas. I again browned an onion and added 2 roasted garlic cloves to the mix. I also added about 8oz grated white sharp cheddar, a dash of cayenne, and about a teaspoon of white wine vinegar to the white sauce to amp up the flavor. If you try my suggestions, do use a full flavored cheese, and taste the white sauce before mixing with the pasta and ham--tinker with it until you think it is flavorful enough to carry the dish. I thought these additions to the dish brought it up from a 3 1/2 stars to 4, and it serves about 6-7 people with something green alongside.

  • Tagliatelle & butternut squash sauce

      I quite like to cook the butternut in this way and have it as a kind of 'mash' on the side with a main dish, as the rustic sauce doesn't quite work with long pasta shapes - smaller, more compact types (think farfalle, penne…) would be better. Left out the ham and used an aged feta instead - lovely!
