  • Vietnamese coffee smoothie

      This smoothie tastes to me just like a Starbucks frappuccino! I took the suggestion to substitute strong coffee for espresso and added a little homemade chocolate sauce to the top. The only complaint I would have is that no matter how much I blended the ice with the coffee, it never really came together. It was more like having a layer of chilled coffee with a layer of icy froth. Very tasty though - I've already made it twice and will certainly make it again. This would be a great summer drink.

      This smoothie was creamy and very sweet, with just a hint of banana. I made this with Queen City Cayenne ice cream from Jeni's Splendid Ice Creams at Home so it had a bit of a spicy kick to it as well.

  • Four-cheese scalloped potatoes

      Perfectly delicious. Needed to bake 45 mins to brown up. Thought mozzarella would be weird, but the cheeses are divine! Used 4 mm slicing blade on food processor.

      This is more of a technique than a recipe - basically boil, peel, and stuff. It only works if you have a recipe on hand for a filling. In this issue, I believe there are ten recipes accompanying the technique.

      I liked the spicy aspect of these but did not enjoy biting into the seeds and chunks of the chipotle peppers. It was too much, even after I had chopped them. I probably won't make these again, but if I do I will definitely puree the chipotle chiles and remove all of the seeds beforehand.
