    This was and absolutely delicious dish. We made it with fresh local trout filets and cooked it for less time. When the fish reached an internal temperature of 125 degrees it was perfectly cooked. My husband who thought he did not like trout was converted.

    Very good and easily malleable to fit whichever herbs your have/like. A simple, healthy meal. I thinly sliced a lemon and put some of the slices into the trout while roasting.

    Really an outstanding recipe. I used thyme instead of tarragon. Fish wasn't quite ready after 15 mins, so I scored it in 2-3 places on both sides, turned it over and roasted it another 5 minutes.
