Disha's pav bhaji from Made in India, Cooked in Britain: Recipes from an Indian Family Kitchen (page 66) by Meera Sodha

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Delicious! We loved it for weekday lunches. With the red onion and cilantro garnish, reminded us of a Costco hot dog in a great (vegetarian friendly) way. So much so we got some hot dog buns to put it on! Yumm!

Quite simple to make and flavorful! Added TVP to bulk it up & add some protein which fit in nicely. Would make again, it makes for a great lunch throughout the week

After reading the notes here i added an additional 50% of all spices, garlic, and ginger. I also toasted the spices a bit before adding the aubergine. Added a bit of water with the aubergines to make sure it doesn't burn. Came out quite tasty. It took noticeably longer to cook than what the recipe suggested. Onions (I used a quick limejuice pickle) provide a nice sharp and crunchy contrast. Don't skip them.

This was good, but not as good as all the other recipes as have tried from this book.

Sadly I have to side with those of you saying this is pretty bland. How could that be with such great ingredients?! A lot of work for just “meh” results..

I feel like I must be using a different recipe to all the other reviewers! Bland and underwhelming and my least favourite recipe from an otherwise outstanding book... Wouldn't bother again.

This was quite popular at our house last night. As another reviewer noted, my son said they were like Indian sloppy joe's! There is an element of the sloppy sandwich to it, but the flavour profile is tart yet sweet. For me the anchor is a must as otherwise it would be too sweet and I think the you need a good does of chopped onion on top as well as cilantro, again to combat the sweetness impacted by the large amount of cooked onion. On the whole, properly dressed, this was a winner for us. I didn't toast the buns as I was leaving them unbuttered to save a bit on fat and I didn't want them to be dry. The pillowy white buns I used were lovely and plenty rich on their own. We also cut back the butter to about 30 gr when sautéing the onions.

Spot on pav bhaji recipe. With the added butter and lemon it evokes all the right flavors. I did add the optional cayenne and can't imagine it without.

  • lesliec on May 25, 2020

This was fine, as another reviewer commented, I didn't think it tasted buttery and indulgent. I found the overall taste and blend of spices a bit underwhelming. I did follow the recipe precisely.

Nice Indian Style sloppy joe. I found the cauliflower needed to cook for longer. There is quite a lot of butter which I don't think this dish needed.

I liked this, but don’t see it as the indulgent, buttery street food described by the author. I thought the white bread roll serving muted the flavours and, texturally, made you miss something chewy or crunchy or meaty, presumably contra the intention of a vegetarian dish. Maybe I just crave seared beef with white buns. Will benefit from slight undercooking, otherwise it can turn mushy, especially on reheating. Agree that lemon is crucial here - might also consider pickling the red onion for extra sharpness.

Very satisfying and fun vegetarian dish. We had leftovers the next day and they were wonderful. The lemon wedge garnish is essential,

This was pretty good, although a little bland on its own, I thought. Adding some spicy lime pickle really livened it up! If you can take the heat, I recommend adding some; it was excellent here. I'm curious as to how the flavors will develop in the leftovers, as so often the flavor of Indian dishes deepen with a little time, and we did have a lot leftover. Maybe my vegetables were on the large side, but I'd say this is easily six servings. It would also be good with the sour cream dressing from the Vij's at Home cookbook.

This dish is fantastic! The flavours go so well together, a very satisfying meat-less meal. (Photo)

Fantastic, richly flavored. Easy to make, only requires two pans. Freezes well. Will make again!
