Cinnamon-roasted seitan and onions from Modern Jewish Cooking: Recipes & Customs for Today's Kitchen (page 223) by Leah Koenig

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This is a tasty seitan recipe, easy and quick (~15 min) to make. I found it needed a bit more soy than written, but that likely depends on how well-seasoned your seitan is. I’ll keep this one in my back pocket for when seitan goes on sale at the co-op. Served with beet salad, steamed kale, and a bulgur pilaf.
