Super-crisp roasted potatoes from The Food Lab: Better Home Cooking Through Science (page 474) by J. Kenji López-Alt

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Super crispy, cut larger next time

Would add a smidge more fat next time

Came out pretty crispy, even without the skin. Looking forward to trying it with it next time for maximum crispiness ??

I peeled my potatoes (recipe does not say to peel), used EVOO, and these turned out to be crispy and delicious. I bet these would be amazing using duck fat.

    Turns put perfectly every time!

Made these as a side dish for roast duck—did not disappoint

Worth the hype. These were ultra-crispy, to the point that they made a sound when tapped on with a fork. (The leftovers didn't stay crispy but I didn't expect them too.) I just used olive oil, but the duck fat or bacon grease version would probably be even more incredible.

Made these with beef tallow. I forgot the potatoes while cooking, but they still turned out fine although they were really soft before roasting. I roasted them in my Ninja grill for a shorter time than suggested

As good as it gets and not overly complicated. Well worth making over and over.

Agree with taste24 - more time consuming than the average roasted potato but the results speak for themselves. Definitely a company-worthy side.

The best roasted potatoes you will ever eat! I watched Kenji's You Tube video on how to make these first, so I added chopped garlic, in addition to rosemary and other herbs I had on hand. OMG! Sooooo good! Leftovers are awesome for breakfast, if there are any actually leftover....

These are the best crispy potatoes you will ever eat, and then best method to prepare them. While tedious, it's brilliant. I used canola oil instead of duck fat.
