    Wonderful sandwich. Definitely don't use a wimpy marmalade...this calls for a slightly bitter, nicely chunky marmalade. I use Mackay's Orange Marmalade with Whiskey. Dundee would also be a good choice.The bacon should be slightly sweet and really crisp. Make sandwiches for a snack or lunch. Or cut up in small squares for an appetizer.
