Roasted tomato soup from My Kitchen Year: 136 Recipes That Saved My Life (page 293) by Ruth Reichl

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Couldn't be simpler. Roasting fresh tomatoes, heirloom or not, brings out amazing flavor. Instead of water, I use chicken stock to thin as necessary.

I make this all year. It's magic! Turns supermarket Roma tomatoes into fantastic, flavorful soup. In the summer, I sometimes have enough of my own tomatoes. No need to be super precise about measuring. This is sheet pan vegetable roasting at its best. It's delicious and my favorite tomato soup. Go grab some fresh Romas and give it a try!

Great hands-off method for making tomato soup. I didn't exactly measure, just followed the basic guidelines, and used canned, not fresh, tomatoes, but it still turned out well. Would repeat for an easy pantry dinner.
