    Was a solid week night meal and easy and straightforward. My chicken was too moist and didn’t brown but still good. Cut up my veggies smaller so they would cook more quickly and mix into the noodles more readily. Used 1 medium sized head of broccoli and 1 bunch broccolini. Need more oil to keep things from sticking. Used avocado oil. Used rice noodles.

    Used spaghetti instead of fettuccine or udon. Added 5 spice powder, garlic and ginger for more taste. Next time I’m cooking the broccolini first, it was too tough this time, maybe depends on the broccolini. Easy and fast.

    I was persuaded to buy this cookbook because it was deeply discounted in the clearance section of my local B&N last summer; I finally took some time to browse through it and try a recipe today. Using my nonstick wok, this recipe came together easily and was really good. I did use broccoli florets instead of broccolini but otherwise I followed the ingredients and directions as described. This is indeed a fast and easy main dish meal. We really liked the crunchy broccoli and caramelized onions with the chicken and noodles. Will repeat.
