      Nice alternative to the usual egg breakfast routine. Especially liked the addition of arugula to the eggs. As promised weekday friendly, but nice enough to serve at a brunch with friends. Will definitely go into regular breakfast rotation.

      Such a beautifully organized and shot cookbook. This is a really easy recipe. There are a lot of items. I substituted shredded nori for the Furikake seasoning and used rice noodles as well as red quinoa. The nine minute egg is truly the perfect soft boiled egg.

      Made for tonights supper. Can't compare it to anything else as I've never had a proper carbonara. Made with linguine and guanciale rather than buccotini and pancetta as that's what I had. Pretty much made in the time the linguine took to cook. Very much enjoyed and will definitely be making again! Now what do I do with 3 egg whites?? ;)

      Excellent quick meal. I used reduced sodium soy sauce to lower the overall sodium in the entree but even with the lower sodium sauce, this entree is 1220mg of sodium per person. I’m sure it didn’t have nearly as much sodium as a Chinese restaurant entree would be. I liked that it was tasty as well as healthier than restaurant versions. Husband also loved the meal. Served with brown rice and a Korean cucumber salad. Added bonus: The snow peas and shrimp make for a very appealing pink and green plate.

      This was a hit with my kids, which was a little surprising since there's no actual noodles in this pho. I did use homemade chicken stock, which I think made it better as it's a fairly simple soup.

      Picked up half a rotisserie chicken on my way home from the office and found this recipe very helpful in transforming the chicken into a nice weeknight family meal. Had to play a little with the recipe though since I neither had chipotle chiles in adobo sauce nor queso fresco at home. So I just left out the chiles and went with a mix of feta, mozzarella and cheddar cheese instead.

      We like these enchiladas a lot. I used rotisserie chicken and I did make the homemade sauce, which only took an extra 15 minutes. It seemed worth it but you could absolutely use canned enchilada sauce to save time, which she recommends. I made these topped with half Monterey jack and half dairy free mozzarella and both were good.

      Good, especially the chicken meatballs. Used low salt chicken broth and needed a lot of salt to bring out any flavors in the broth. Liked lots of vegetables. Can prep meatballs ahead for a time saver.

      My husband and I loved this soup! The spices and fresh ginger enhance the carrots without overtaking them. I was impressed with how creamy the soup came out, considering there’s no dairy in it or on it. I liked the way the onions cooked on low heat covered in a stock pot. I used store bought organic vegetable broth instead of chicken or vegetable stock, so don’t know what difference those choices would make. Will definitely repeat. Photo makes soup look greenish. Mine was darkish orange.

      This was the first time I was able to find cime di rapa at the market in Vienna, so I was looking for a recipe with a high family success factor. Since GP‘s recipes are always family pleasers I went with this one and it did not disappoint at all, both boys happily finished their pasta. Quick, easy and delicious, perfect weeknight dinner!

  • Turkey meat loaf

      We liked this meatloaf. It was juicy but not falling apart juicy (which I was afraid would happen since the meatloaf mixture is so wet). I put the mixture in a loaf pan and then released it onto the parchment-lined sheet. The mixture was so wet, it didn’t keep the loaf shape, and was pretty much low rise rectangular shape. In the end, it rose a bit and was easy to cut. I grew up eating meatloaf that had no ketchup topping and didn’t like it when I had it in restaurants; my husband did have that experience growing up and didn't have fond memories of a thick layer of ketchup on top. Ms. Paltrow’s minimalist ketchup topping mostly sank into the loaf and was pleasant. This certainly doesn’t compete with my fav meatloaf- James Beard’s thick bacon topped meatloaf- but it was a lot healthier, and the turkey bacon as part of the filler helped the flavor quite a bit.

      Great dinner. It was pretty easy to make and much healthier than regular meat loaf. I baked it with a pan of water on the bottom rack to keep the meat loaf moist. Also turned the oven to 400 degrees and bake 10 mins at the end finish the meat loaf.

  • BBQ chicken skewers

      A very simple and delicious entree. I used store bought BBQ sauce (Stubbs Original). Although the directions said to use only one wooden skewer per single tenderloin, I found this wasn’t needed. I didn’t open my package of tenderloins before prepping my skewers, so I was two short and ended up putting four tenderloins on two skewers. Those grilled more evenly and faster than the single ones which were unbalanced and had to be flattened with a spatula against my stovetop grill pan. The basting of sauce at the end of cooking and as an additional side really made the chicken feel like it had been grilled outdoors over briquettes. Served with homemade coleslaw and baked beans. A fun treat on a cold Winter night.

      I was persuaded to buy this cookbook because it was deeply discounted in the clearance section of my local B&N last summer; I finally took some time to browse through it and try a recipe today. Using my nonstick wok, this recipe came together easily and was really good. I did use broccoli florets instead of broccolini but otherwise I followed the ingredients and directions as described. This is indeed a fast and easy main dish meal. We really liked the crunchy broccoli and caramelized onions with the chicken and noodles. Will repeat.

      Used spaghetti instead of fettuccine or udon. Added 5 spice powder, garlic and ginger for more taste. Next time I’m cooking the broccolini first, it was too tough this time, maybe depends on the broccolini. Easy and fast.

      Good flavor and straightforward preparation. Did make gluten free and would add some cornstarch to the flour next time to help thicken the sauce since gluten free flour doesn’t do that very well. Not a lot of extra sauce.

      This is excellent and quick to make. We came home late last night and a quick search on EYB for our go-to ingredients tomatoes, herbs and cheese produced this recipe, which will be one of my go-to recipes for the rest of the summer while cherry tomatoes are at their peak.

  • Salmon skewers with chermoula

      The chermoula-yogurt mixture is delicious and would taste good on a boot. That said, if you follow the proportions she gives you in the recipe, you get a much greener sauce than is shown in the photo. I just added more yogurt till it looked right, and I think that was the right decision - if you faithfully follow the recipe you'll wind up with a thinner sauce that doesn't quite emulsify due to all the olive oil.

      My husband and I liked this sauce with the salmon. I chose to grill my two salmon fillets whole, on a stovetop grill pan, instead of on skewers. The toasted cumin seeds stood out from all the other ingredients, so if you like the flavor of cumin, you’ll most likely like this sauce.

      The sauce is delicious and the skewers are dead easy. The sauce does break when the yogurt is added. It doesn’t match the pic, but I will still make again. Also good for a picky eater. I just made a plain skewer and my 5 yo who hates almost everything I make gobbled it up.

      This would have been good had it not been so overwhelmingly salty. It think the amount of fish sauce is an error - 5 Tbsps is more than I've ever seen in any recipe. It also imparted an off-taste to the turkey when it should have enhanced it. Perhaps serving it with rice would have helped balance the saltiness. I will try it again, but not without modification.

      This was delicious and pretty quick. A riff on other similar recipes with the winning combo of ground meat + vegetable + fish/lime sauce (of which my favorite is Nigel Slater's Broccoli and Lamb from Tender vol. 1), we liked the combo of turkey and eggplant, which never would have occurred to me. I used slightly less eggplant than called for and thought it got lost a bit--would up it next time. Served with brown rice, a quick cucumber/rice vinegar salad, and hot sauce.

      Very good, but a tad too salty for my taste. This was the first time I used eggplant in a stir-fry and we really liked the silky texture of it. Substituted ground chicken for ground turkey.

      This was super easy. I reduced the amount of agave by a tsp and I only added 1 tsp of fish sauce. There must be a mistake in my version of this recipe which calls for 5 tablespoons of fish sauce which I think would greatly overpower the dish. I might like a green vegetable, maybe zucchini, added to this next time.

      We liked the crunchy bread topping on this mustard chicken recipe. Boneless chicken breasts can be tricky to cook/bake because of their size variance, but all of mine came out perfectly baked after first browning them on a stove top grill pan. I made one switch - mayonnaise for Veganaise. Simple and tasty. Served with steamed broccoli drizzled with balsamic vinegar.

      I love this recipe. It has become one of my most favorite ways to make chicken. The chicken itself is good, but bread that emerges from this is just so delicious. I think it's just as good as the Zuni Cafe's which is a bit more difficult to make.

      This is a family favorite dinner. The chicken is crispy and has a nice flavor from all the herbs and lemon. The best part of the dish is the crusty bread that crisps on the outside and soaks up some of the juice from the sheet pan. The sauce is easy to make while the chicken rests. It's difficult to say which is better: the chicken or the bread! I always use twice as much bread and there is never any left over. I substitute spinach for the arugula since some of the family finds arugula too bitter. This is an easy one pan recipe that everyone loves to see on the dinner table.

      This BBQ sauce recipe produces an orange-red colored, tangy, lighter sauce compared to ones I’ve made before or bought in a grocery store. We liked it, rather than loved it, and would make it again when wanting a less heavy BBQ meal. Served with the suggested grilled chicken tenders (reviewed earlier, separately).
