    The proscuitto wrapped stuffed chicken breasts were so flavorful! I took some advice from the previous reviews about using Boursin garlic and herb cheese and I used a similar cheese from 365 brand. I added more cherry tomatoes and used dried oregano because I did not have fresh. I would make this one again.

    We really enjoyed this flavourful chicken. Using a tip from an EYB note, I used herb & garlic Boursin, adding extra garlic, fresh herbs & onion powder to taste. Measurements like "a cup of cherry tomatoes" annoy me so I simply eyeballed the (likely much larger) amount, filling in all spaces in the pan. I also put a separate pan of red onion, sweet peppers, broccoli & baby potatoes in at the same time. Everything was then mixed together & the result was really good. Next time I will try a larger cast iron and add the extra veg in with the chicken & tomatoes.

    Overall pretty good. The chicken took 35 minutes in the oven. I used dried oregano and thyme without issues. I also used whipped cream cheese instead of regular, not sure if that’s what made the difference in mine not really having any cheesy sauce on the skillet, but still tasted good! I definitely would at least double the tomatoes next time, as one cup doesn’t yield much for four servings. I served with mashed potatoes.

    This was a pretty easy and quick way to cook chicken for a family dinner, but not quite company-worthy. Make sure to serve with bread to mop it all up.

    My chicken breasts were slightly smaller, so I reduced the filling a tad. I used a whole pint of cherry tomatoes. The chicken took 40 minutes to cook. It tasted AMAZING. We mopped up the cheesy sauce with bread. Two of us devoured the whole thing. I can't wait to make this again.

    Instead of using the goat cheese mixture I use Boursin garlic and herb cheese. It's pretty fast to make this way and really good.
