    p. 101 -Tender and crispy with a delicious pork-infused sauce this dish was the star of the evening in my view. We loved this dish and I’ll happily add it to my repertoire. I messed up somehow and purchased ground pork shoulder instead of a piece (which is supposed to be sliced). If the dish suffered at all for this mix-up, we certainly didn’t notice it because w loved this dish. I do believe that the stock is a key flavour component in this dish and I was fortunate to have some delicious vegetable stock on hand, which made for a fabulous sauce.
