Pasta all'amatriciana from Salt, Fat, Acid, Heat: Mastering the Elements of Good Cooking (page 294) by Samin Nosrat

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Pancetta or bacon matchsticks (lardons) can be substituted for guanciale.

I like this even better than Marcella’s recipe, her base sauce is simple to make and a perfect foil for the tasty guanciale, pecorino, and chile heat. A classic!
