Carrot soup with North African spices from Fields of Greens: New Vegetarian Recipes from the Celebrated Greens Restaurant (page 114) by Annie Somerville

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute sweet potatoes for potatoes.

Used berbere in place of the called for spices. Loved the flavor. Made this in the Instant Pot. Sautéed onions, adding garlic and ginger when they were just softening. Added berbere. Added other ingredients except for the OJ. High pressure, 10 minutes, natural release. Blended with immersion blender. Mixed in OJ. Served hot with a drizzle of harissa oil.

I thought this soup was even better served cold.

This was more subtly spiced than I expected, but it grew on me. Very easy and worth making again. I think I might prefer a sharper citrus than orange juice--will try lime next time.
