Accompaniments: Chunky potatoes with garlic and peanuts (Lasoon sengdane batate chi bhajee); Ridged luffa squash with onion and cilantro (Toori nu shaak); Puffy whole-wheat breads (Poori); Lime wedges pickled in cayenne pepper and mustard oil (Nimboo ka achar)
