    Can substitute New Mexico chiles for guajillo chiles, red pepper flakes for chiles de arbol, distilled white vinegar for apple cider vinegar, and queso fresco for cotija cheese.

    I made the Impostor Al Pastor for a gathering and they were pretty outstanding. My modifications were to use pineapple vinegar instead of apple cider vinegar in the marinade, and, more importantly, to do all the cooking in a cast iron skillet on the grill (following the recipe, cooking in a pan on the stove, it started to stick and burn very rapidly. Moving this outdoors reduced the "mess" considerably.). With that technique, I was really happy with the results!     This was delicious. I didn't have any pineapple so I added canned mango to the sauce and orange juice to the salsa.

    Even with chicken instead of pork and the "incorrect" chiles, this was incredibly delicious -- and fairly easy, as the recipe promises.

    Delicious marinade. Made it this morning then cooked the meat this evening. Cooking did take a while since there was so much meat, but it was easy and fun to do.
