    Really tasty egg salad sandwich with the fresh tarragon, tarragon vinegar and shallots. I add chopped celery for some crunch. Good on my homemade Sourdough bread. I've also made this just as a salad course and as an appetizer dip with pita chips.

    These are very similar to the chicken salad tea sandwiches in this book. They are fantastic and the tarragon really makes them taste fancy.
