    The pork chops by themselves were OK but with the onion marmalade, they were amazing. I wish I made more of the marmalade. I subbed an apple jam for the red currant jelly and the onion marmalade still turned out OK. Finally when I returned the pork back to the pan after initial marmalade cooking, a lot of liquid came out of the pork, so I wasn’t able to cook until dry without overcooking the pork .
