Where’s the full recipe - why can I only see the ingredients?

    I was the only one who liked this in my family, but I really, really liked it. My 8 year old ate it begrudgingly, but my 2 year old refused. I think they’ll come around at some point, or maybe I’ll make some tweaks like keeping the cauliflower slightly bigger (I riced it) or use a different type of bean (I used black beans). The toppings are so healthy and the flavor is amazing.

    Never thought of nachos as a meal but with the spinach, cauliflower and beans - it works. A half batch on a quarter sheet pan was absolutely a full meal for 2. Next time, I'll add something pickle-y like pickled jalapeños. Like most things I've made with Community Organizer, there's a sweetness that surprises me but wins me over in the end.
