    Frozen cheese tortellini can be substituted for fresh.

    Have also made with frozen - and bagged from Trader Joes. This is a quick easy summer meal or a lunch in any other season. I find it needs to be eaten right away though as the arugula and dressing don't hold over. Also the tortellini begs to be eaten right after cooking and cooling a bit but not too much after that.
