Cookies made from sugar cookie mix from The Complete Autumn and Winter Cookbook: 550+ Recipes for Warming Dinners, Holiday Roasts, Seasonal Desserts, Breads, Food Gifts, and More (page 402) by America's Test Kitchen

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I'd call these vanilla butter cookies rather than sugar cookies. They're not very sweet. The flavor really reminds me of honey-nut cheerios. Since I was making these for a children's Christmas party where they'll be coated with icing and sprinkles as an edible craft, that doesn't matter so much. I got 29 cookies instead of 24 off of 3 cups mix. As usual, lowered oven temp by 25F to 300F (ATK recipes almost always have too hot oven in my experience, or ours runs really over the mark). Medium texture, slightly crisp. Overnight in an airtight container changed texture to mildly chewy (though slightly eggy flavor).

I have now made all 4 batches of cookies that come from the base mix recipe. Each time I tried and failed to pull them out of the oven before they got crunchy. Last batch I subbed veg. shortening for the butter. Bingo! You can have a buttery cookie or a soft-centered cookie, but not both.
