    This recipe is very similar to the one in her book (there is a video online, I don't have the book), and I used flat mushrooms. Rather than a garlic butter, I made a strongly spiced oil with ghee. I used garlic, ginger, fresh chilli, chilli powder, black pepper, mustard seeds, coriander seeds, fennel seeds - the sort of flavourings you might use in an Indian sauteed mushroom dish. Absolutely divine. Served with a gently spiced and flavoured toor dal-rice khichdi, slightly lemony.
