Can substitute the book's "Homemade chicken katsu," pork schnitzels, or frozen fish fingers for breaded chicken strips; ketchup, A-1 steak sauce, or barbecue sauce for tonkatsu sauce; and regular mayonnaise for Kewpie mayonnaise.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I made the 15-minute katsudon with the homemade chicken katsu from the book and gluten-free Japanese barbecue sauce. Everyone really enjoyed it, and the additions of lemon, pickled ginger, toasted sesame seeds, Kewpie mayo and Dijon mustard all rounded out the simple chicken and rice dish. My family loved it. Not necessarily a 15-minute dish.
