Lentil, lemon, and tuna salad from Around My French Table: More Than 300 Recipes from My Home to Yours (page 140) by Dorie Greenspan

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Pg. 140. This was ok, but nothing special. On the positive side, it didn't take too long to make and it made for a light lunch. On the other hand, it was not an attractive dish and did not make good leftovers. I wouldn't make it again.

This is really easy and delicious. Dorie uses a whole preserved lemon. I just used the skin because my family doesn't love a strong lemon flavor but I think next time I will follow Dorie's lead. We served this, as suggested, with salad greens and cherry tomatoes. I can't wait to have the rest for lunch tomorrow!
