Chicken, apples, and cream à la Normande from Around My French Table: More Than 300 Recipes from My Home to Yours (page 218) by Dorie Greenspan

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Rich and deceptively easy to make. Chicken was cooked perfectly but I used very large pieces. Needed a bit more salt and perhaps a tiny more acid-- maybe from tarter variety of apples and or some lemon at the end. Served with the spinach as recommended and it was a lovely meal, would make again.

This dish was easy to pull together and has a very tasty sauce. Brandy worked well. I added the leaves from a few sprigs of fresh thyme to the sauce, too - very nice. Like Sandiegolemons, our chicken breasts got overcooked and kind of rubbery in spots. I had ignored the recipe's instructions to use room temperature chicken - I'll follow that instruction next time so the chicken cooks more evenly. I also pulled the chicken at 165F but will pull at 160-165F and let carry-over cooking do its magic next time. And I overheated the pan for the initial sear - I'll keep a better eye on that next time!

This was OK. Add more apples! Also watch the cooking time on the chicken breasts, our’s were overcooked. Have that thermometer ready. We were hoping to be transported back to Normandy with this recipe but it fell short. I was excited to use our Calvados though, maybe should have doubled that. We also used apples from our tree, they were great...but we wouldn’t do this recipe again.

This was good but it seems that it would be better with dark meat over chicken breasts. Also, the apples never softened completely.

I had one and and an half chicken breast left over and didn't know what to do.... This was a simple meal ( quicker than all the cutting and chopping for a stir fry).. The combination of flavours was delicious and is something i will make again

This is close to the Diable recipe that follows in terms of rich and tasty flavour. The sweetness of the apples adds a nice little note.
