Quiche Lorraine from Around My French Table: More Than 300 Recipes from My Home to Yours (page 157) by Dorie Greenspan

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Very good classic French quiche. I made the tart dough from the same book and had to tent the edges to avoid scorching. I may skip par-baking all together next time - apparently it's not common from French home cooks to do so. The filling comes perfectly to the top in a 9" x 1" round tart pan.

Versatile and nostalgic. Good proportion of eggs to cream and bake time which produces thinner pie or tart sized quiche. Added cooked spinach, caramelized onion I keep in the freezer, nutmeg and cooked bacon. Photo added

Made it again using leftover ham with some leek. Simple to make and so good.

Simple, perfect, classic quiche. I usually double or triple the filling since this makes a pretty small, flat quiche, and we like it thicker.

Made this but used odds and ends of cheese in fridge. Nice and creamy
