    Good flavors, great with Pinot Noir. Earthy, gamey, flavors with gizzard-mushroom-brown rice stuffing. Trussing is the prep challenge, to keep stuffing inside during sear and braise. The rest is easy. Eating is messy, or would be 4.5 stars.
