    The best pancakes I've ever had! I used salted butter since other recipes in the book specify when it's unsalted. Don't be worried when the butter hardens after the buttermilk is added. It'll melt into perfect pools when cooking. I got 9 3.5 inch tender and fluffy pancakes from the batch and I'm not ashamed to say that I ate them all myself!

    Easy, quick, and delicious. Mine were on the thinner side, so not real thick and fluffy. Using a 1/4 cup measuring cup for each pancake, I got 9. Edited: Made them a second time and they were not as thin (still excellent), so I must’ve measured differently the first time!

    So tender and buttery! This is my favorite pancake recipe. I make it every weekend and eat most of the batch hot of the griddle. This quantity would probably serve 2 not-too-indulgent people, especially if you served something with it, like eggs or fruit.

    Just like everything else I’ve made from this book, this is the simplest, best recipe. And it’s just the right amount for two people — you can mix it in a 2-cup Pyrex liquid measure for easy pouring into the pan. Eggier than most pancakes I’ve had, which I really like, and I’ve tested Cunningham’s suggestion for keeping in the fridge for a couple of days. It needs a quick whisk but works great for Spontaneous Pancake Snacks.

    Wow, these pancakes are fluffy, light, and melt in your mouth delicious. The best pancakes yet. One recipe made 8 4 inch pancakes. Great use of buttermilk.

    Best-ever pancakes. Light texture. Not too much melted butter in this recipe, which is hard to find. The recipe uses 3/4 c flour, which makes the perfect amount of pancakes in our house.
