Texas-size banana muffins from Baking by Flavor: A Collection of Over 250 Luscious Desserts Arranged by Flavor--From Chocolate and Vanilla to Lemon and Buttercrunch (page 156) by Lisa Yockelson

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

These are fine. I cut down on the nuts and coconut, so they weren't as chock-full of bits as the recipe intends. Instead they were mildly banana-y and pleasant enough. The spices are surprisingly subtle. I would double the cardamom if I make them again and let the other spices stay in the background. It's annoying that the recipe wants you to make 13 muffins. With the reduced volume since I left out nuts and coconut, I managed to mound all the batter into 12 standard-size muffin cups.
