Pipián verde from The Great Chile Book by Mark Miller

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute yerba santa leaves for anise seeds, and peanut oil for duck fat.

This is another Mexican dish that includes everything and the kitchen sink much like a mole. I love that items that would normally be discarded, such as radish greens, are in the recipe. The flavor was good but at one point I thought it reached its peak and then I cooked or added ingredients past that. Unfortunately, I can't remember where that was. I had to use arugula instead of watercress because of availability.
