Light fruit cake from Delicious Magazine (Aus), August 2010 (page 94) by Bill Granger

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

I agree that the cake doesn't need icing (unless, perhaps, for a special occasion). Topping the cake with blanched almonds prior to baking, could be an alternative decoration. I used 150g margarine and 175g unsalted butter, and 3 large (70g+) eggs. Also omitted the pinch of nutmeg and increased the cinnamon to 1.5 teaspoons.

This was nice even without cranberries and we thought it was sweet enough not to need icing. Worked well with substitution of macadamia oil for half the butter to make it lower cholesterol.
