    I normally do not care for western sweet potatoes especially when sweetened , but since I like most of Kenji's recipes I thought I would give this a go using regular western sweet potatoes with orange flesh. I cut these into about 1/2 to 3/4 inch slices. Came out great. Best to keep in hot water with cover on for about 45 to 50 min though it depends on thickness of slices. Really liked these. I did reduce the honey and adding parsley is spot on. So simple to make ahead and reheated. Looking forward to making this again.

    For some reason I tried these again, however I still can't discern any difference compared to just roasting sweet potatoes in the usual way.

    For me, this wasn't any better than straightforward roasting of the sweet potatoes so I will go back to that method.
