Can substitute pasilla chiles or mulato chiles for ancho chiles; California chiles, costeño chiles, or choricero chiles for New Mexico red chiles; árbol chiles or pequin chiles for cascabel chiles; jalapeño chiles for Thai bird’s eye chiles; and bourbon for vodka. Dried beans must soak in water 8 hours or overnight.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Made vegetarian by skipping meat & anchovies, and adding 1 cup of buckwheat and several Kalamata olives. Otherwise, largely followed recipe. Yummy!
