Can substitute cotija cheese or Romano cheese for feta cheese, and hot chile flakes for chile powder.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Super good! I used cotija cheese, and served this as a side to roasted pork tenderloin. Leftovers still good cold from the fridge on day 2! Will make again.

This was really good and I’ll definitely make again.

Made a half batch with what I had on hand - Trader Joe's frozen roasted corn (thawed), feta instead of cotija, pickled jalapeno instead of fresh, and no green onions. Tasty and quick.

A constant in our house and constantly requested by family in the summer. I put the corn on a sheet pan and put it under the broiler to speed up the browning process and because I usually double or triple the recipe as this stuff gets eaten up quick.

Good! I'd ease up on the garlic just a bit to keep it from overwhelming the other flavors. Use a nonstick pan next time as the wok got really charred and burned-on bits were hard to clean from it.

This is a family favorite brought into the family by my nephew in law. We usually make it with frozen corn for ease, and pan char the corn. Cotija is really preferable to Feta.

Quite good, used frozen corn and skipped the jalapeño because I did not have any. Afterthought, should have used my home canned pickled jalapeno.

Absolutely delicious though I missed the epazote. My home grown jalapeño was really spicy, which went well with the sweet corn.

    Very good!

Delicious! I've made this several times and even when I substitute ingredients it turns out well.

Served this along with ribs and watermelon for dinner 8/9/2015. My corn might have been closer to two cups than three and I had some trouble with the corn releasing something that made a sticky burned caramel on the bottom of my pan, but the end result was really tasty. I think a bit more corn might have provided a better balance of flavor, but still, it was really good.

Accidentally made this without mayo and it was awesome!
