Smacked cucumber with sweet-and-sour sauce from Every Grain of Rice: Simple Chinese Home Cooking (page 34) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Always a favourite. I like this variation, with more vinegar.

Of the many variations of smacked cucumber this might be our favourite. The little guy likes it without chilli so I usually separate out some for him and then add the chilli oil with a bit of sediment to ours. Nice balance of tang and sweetness, and with the added heat for the adults this is just right.

We like this variation too. Doubled the recipe and used 1 T of garlic, 1 T light soy sauce and added 1 T of toasted sesame oil per recipe.

This is a great variation that I actually prefer more.

Love this sauce variation. A repeat for sure!
