Smoked tofu with celery and peanuts (Liang ban dou fu gan) from Every Grain of Rice: Simple Chinese Home Cooking (page 44) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute spiced tofu for smoked tofu.

As noted, this is a great pantry recipe since I usually have all these ingredients. I thought it needed an acid hit, so I squeezed some lime juice over it and it was perfect.

I very much like this as a ‘oh gosh there’s no vegetables’ meal. Celery, since it’s cheap and keeps for weeks, is almost always on hand, as is spiced tofu and peanuts. I’m not going to claim this is my favorite meal, it’s a bit too plain for that, but given its simplicity and practicality it earns solidly 4.5 stars from me.
