    This is a refreshing salad with a nice texture. I used long sweet red peppers to get the color but no spice. I liked it better the next day.

    I was able to find fresh (not dried) wood ear mushrooms and enjoyed this refreshing salad. I had pickled chilis on hand which added a lovely kick to the salad. Next time, I will stir together the garlic, chilis, salt and rice vinegar first, to allow the salt to dissolve. Then stir in the sesame oil, and add to the wood ear mushrooms and cilantro and let it sit for a bit before serving. Will definitely make again.

    felt imbalanced. I added a fair amount of vinegar (probably 4x what was called for).
