Hangzhou broad beans with ham (Huo tui can dou) from Every Grain of Rice: Simple Chinese Home Cooking (page 158) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute peas for broad beans, and Spanish ham for Chinese ham.

This is a very mild dish, one where the ham does most of the work to flavor the favas and it’s a wonderful spring dish, especially with leftover ham. I added soft tofu as I had it to use and served it with the garlicky smashed cucumber salad from the same book.
