Egg-fried rice (Dan chao fan) from Every Grain of Rice: Simple Chinese Home Cooking (page 257) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Used less spring onion, and added some cherry tomatoes to the side. Nice and quick dinner.

Used spinach instead of spring onion bc that’s what I had. Easy and quick! Ate on its own as a quick lunch.

Pg. 257 Not a bad little side but I would up the seasoning personally. I served this with some grilled fish and stir fried cabbage and I found that it needed a bit of jazzing up as the rest of the dishes were fairly subtle of flavour. I think if this is a basic side no worries, but if it is going to be taking a bit more pride of place go heavier on the seasonings as she says. Also, make sure they egg is mostly cooked as I found I added my rice a little too early and I ended up having to cook the rice longer than I would normally have to make sure the egg coated rice cooked sufficiently.

I agree with breadcrumb’s note! Quick and tasty! We served this with BBQ’d tuna. A beautiful, satisfying meal! I would suggest that there was no need to season the rice with salt as the soy sauce was salty enough.

    p. 257 - This makes for a quick and tasty fried rice. Prep is simple, especially if you already have cooked rice on hand, which we did. Oil is placed in a hot wok and beaten eggs are swirled in to cover the bottom of the pan. When the bottom of the eggs has cooked and the tops are still runny, rice is added and incorporated. Once the rice is piping hot, light soy and or salt are added to taste. Sliced spring onion and a tsp of sesame oil are added just prior to plating. As it happened, I had a handful of the mushroom dish left over from another meal so I tossed those in here as well. Rice is nice!! - with a nod to my Godson whose face used to light up whenever I made him rice for dinner. His Mom never cooked it so the first time I served it to him, I said “mmmm, rice is nice” - he agreed and to this day, he’ll still say that if I make rice w dinner!
