      This was an easy and satisfying recipe, but not spicy at all. I used Wildwood Firm tofu and added chopped Thai basil because I have it in my garden. Next time will add ginger and more pepper for a spicier dish.

      This was a good, but not exceptional, recipe that results in a fairly typical bran-like muffin. The recipe is not a show-stopper, but I'd make the muffins again for breakfast fare.
