      Used half coconut and half olive oil. Used hemp instead of almond to make it school safe.

      Nice snack cookies that keep well in airtight container. I like to make them with wholemeal spelt flour instead of wheat, double the ginger, and just a spoon of sugar. Also good with chopped prunes instead of raisins.

      I made this last summer for a lunch and liked it a lot. I really liked that it uses millet which is similar to quinoa in size and texture, but is much less expensive. It was a good introduction to this book which seems to have a good variety of recipes.

      A good version of a standard seeded 'sandwich' bread, simple and quick to make. I used wheat for the white flour portion last time, and think it added noticeable extra structure. Much better rise with ice cubes in a tray under the loaf tin.
